Shrimp & Avocado Tostadas...YUM!

Thinking what to make for dinner tonight? Think no is another fast and tasty recipe for my busy moms/dads. I'm here to make life a bit easier for you. Isn't that what we all wish for anyways? For someone to come and make everything so effortless...ahhh, a mama can wish right?

Well mommas, wish no is another super easy, refreshing and healthy dinner option for you, the hubby and the kids. (Kids! Now that, I’m still wishing for). Takes all but 15-20 minutes to prep and satisfy all your cravings!

Shrimp & Avocado Tostadas


  • 1 lb shrimp, peeled, deveined and chopped into thirds
  • 1 cup cherry tomatoes, cut in halves
  • 2 avocados, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 lemon, juiced
  • salt, to taste
  • pinch of red pepper flakes
  • 2 teaspoon garlic powder

In a medium size saute pan, cook chopped shrimp with the juice of one lemon, until it turns pink. Transfer your shrimp to a bowl and allow for it to cool off. Chop and mix all your ingredients together. Add cooked shrimp and all dry ingredients/spices. Squeeze juice of one lemon and one lime and mix everything together. Serve on homemade tostadas or the Guerrero Baked Tostadas and garnish with jalapenos and sour cream, add whatever else you'd like.

Sometimes it works out, other times, well...we eat it anyways. Most of the time I cook something for me and the hubby and cook something else for the kids. I find recipes online and alter it to make it my own. I make stuff up as I go along. Usually just throwing in spices and ingredients and hoping it all works just fine with one another. No rhyme or reason...just a mom cooking for her family! All you have to do is have fun with it and enjoy the process.
