Welcome back to Wishful Wednesday! At this point of the day, all I really wish for is someone to come and cook for me and my family tonight! I am officially exhausted, mentally and physically! Unfortunately I don't have anyone to cook for me and eating out isn't an option for us tonight. So whats for dinner? I can promise you, I'm making this up as I go along...it's a "eat whatever I can muster up" kinda night! That's life, that's reality. It's not always going to be these beautiful elaborate meal plans. Be happy you're not going to bed hungry!
I wanted to cook with lentils tonight but realized what I originally thought were my ready to eat lentils from Trader Joes were actually a package of beets. They're packaged the same which is why I was mistaken. So, I had to quickly come up with an alternate option for dinner using the beets. I love beets so that wasn't the problem. I just had to figure it out with whatever I had left in my fridge.
Chopped Spinach Salad with Beets & Feta
-Pack of Trader Joes Steamed & Peeled Baby Beets (ready to eat), sliced into bite-size wedges
-2 cups chopped spinach
-crumbled feta cheese (however much your heart desires)
-about 1/3 of a red onion, thinly sliced
-a handful of chopped almonds
-salt, to taste
-1/2 avocado (optional as an extra topping for your salad
Roasted Red Potatoes with Ghee
-4 red potatoes, sliced into bite-size wedges
-2 tbs of melted Ghee
-1 tbs of ground red pepper (more or less depends on your spice level)
-salt, to taste
Add all ingredients to the potatoes and toss well. Making sure potatoes are evenly coated. Bake for about 45 minutes at 375 degrees. Garnish with chopped parsley and serve.
** Ghee is clarified butter that has had its milk solids basically skimmed away from the fat. Making this a butter with no lactose. It can be bought at most markets. I buy mine at Trader Joes.
I added a few of our new favorite veggie nuggets we found at Costco. Dr. Praegers Organic Super Greens Veggie Nuggets. These are great for last minute meal ideas, even for the kiddos. Olivia really likes them and Aleena...well, would rather they be chicken nuggets. As long as she tries them and doesn't just refuse them, I'll keep putting them on her plate.
hat I love the most is that I can understand the ingredients. Just because I'm looking for quick and easy meal options for nights like tonight, doesn't mean I want to feed my family junk. We have been trying our best to make better decisions, whenever we can. It's all a work in progress...for the kids too!
Back to these veggie nuggets...I added a few of these to complete our dinner for tonight. They are very tasty and very filling. Totally recommend!
