Lentil Tacos...YUM!

Can I get an Amen for these LENTIL TACOS?!?!
It’s become one of our favorite, quick and healthy dinner choices for a
busy weeknight!
Not only are they ridiculously easy, they are insanely tasty!
The hubby and I have been trying to eat a more plant-based diet (at-least whenever we can) and to be honest, sometimes it’s hard to think of things to make that doesn’t consist of carb overload. We typically like to eat from home 5 days out of the week. Trying to think of new things to make is tricky. I'm not pushing the kids into this lifestyle change but I am trying to teach them to make better food choices too. Plus they aren't much meat eaters anyways...chicken is as adventurous as mine get. It is what it is. At-least they understand that having veggies on our plate is a must!

On those busy weeknights all this mama wants is something effortless and this is one of them! I have been wanting to share this recipe with you for some time now. Hope you try it and enjoy it as much as we do! 

Lentil Tacos

Ingredients
A box of ready-to-eat lentils
3/4 cup water
1/4 cup taco seasoning of your choice (I get the big Costco size)
handful chopped cilantro

Toppings
chopped tomatoes
chopped lettuce (I used a mix of kale and spinach) 
shredded cheese of your choice ( I use a Mexican cheese blend)
pico de gallo
jalapenos
avocado/guacamole (my avocados weren't ready to eat yet) 
sour cream/greek yogurt
**whatever toppings you want on your taco**

arm up your ready-to-eat lentils with the 3/4 water and taco seasoning. Add the cilantro at the very end, cooking it with the lentils for just a couple of minutes. Over-cooking cilantro will result in removing all its flavors. Literally, add it right at the end. Remember, these lentils are cooked and ready to go. There isn't much to do here other than just warming everything up. 

Serve with warm organic flour tortillas or baked tostadas. 

It's really that easy! I almost feel silly breaking it down for you. If you have time and are in the mood, then by all means, cook your lentils from scratch and make your own taco seasoning. If you're not, then do it my way!
